<p><strong>Preparation:</strong> Put all  ingredients except coconut oil in blender and blend until smooth and  creamy, adding only enough coconut water to help blend. Add coconut oil  last and blend until mixed well. Put in chiller for a few hours until  cool and firm.  Makes about 3 cups</p>

</p><p>Last week an old friend invited me and my family to dinner.   I made a raw berry cheesecake to bring and told her that I&#8217;d be happy with any kind of salad for the main course.   She insisted on making me some kind of gourmet raw food dish.  Since my friend works full time, I knew she wouldn&#8217;t have much time to prepare a dish.    Plus, although she&#8217;s been vegetarian for years she has no raw food preparation experience.   For that reason I needed to find an easy recipe that would still make her feel like she had prepared something really good.</p>

<h3>Raw Ratatouille Recipe</h3>
<p><strong><span style="text-decoration: underline;"> </span></strong></p>
<p><strong>Tools:</strong> Blender, Dehydrator or glass jar and sun</p>
<p><strong>Ingredients:</strong></p>
<p><strong>Vegetables:</strong></p>
<ul>
<li>½ red pepper (sliced thin with mandolin or by  hand)</li>
<li>1 medium zucchini (spiralized into ribbons)

<li>¾ C spinach (chopped small)</li>
<li>1 Tbl olive oil</li>
<li>pinch of salt</li>
</ul>
<p><strong>Sauce:</strong></p>
<ul>
<li>½ C sun-dried tomatoes (soaked)</li>
<li>1 clove <a href="http://healingvibes.com/news/raw-garlics-many-health-benefits/">garlic</a></li>
<li>2 tsp olive oil</li>
<li>1 tsp lemon juice</li>
<li>2 small tomatoes</li>
<li>1 Tbl fresh basil (chiffonad)</li>
<li>1 tsp fresh time (chopped)</li>
<li>1 Tbl fresh parsley (chopped)</li>
<li>1 ½ tsp salt</li>
</ul>
<p><strong>Preparation:</strong></p>
<p><strong> </strong></p>
<p><strong>Vegetables:</strong> Combine the vegetables in a large mixing bowl and sprinkle with olive oil and a pinch of salt. Massage the vegetables gently. For softer vegetables put vegetables on a teflex sheet and allow to soften in the dehydrator for 1 – 2 hours, or put them in a large glass jar in the sun for 6 – 8 hours.</p>
<p><strong>Sauce:</strong> Combine all ingredients for the sauce and blend until smooth and creamy. Add a little water if necessary to get the blender to run. After you have made the sauce, pour over the vegetables and mix well. Serve and enjoy!</p>
<p>Makes about 2 cups</p>

<li>½ C almonds</li>
<li>½ C cashews</li>

<li>1 tsp lemon juice</li>

<p><strong>Preparation:</strong> Grind nuts and seeds in a blender.  Mix all ingredients in a bowl, adding water last. It should form a sticky mound. Form mixture into a burger-style patty. You can serve this dish cold or you can dehydrate the slices for 3-4 hours.  Serve with &#8220;fries&#8221; and tamarind chutney</p>
<h3>Recipe for Raw Vegan French Fries<strong><br />
</strong></h3>
<p><strong>Ingredients:</strong></p>
<ul>
<li><strong> </strong>5 Carrots or 1 large jicama</li>
<li>½ tsp turmeric powder</li>
<li>1 tsp lemon juice</li>
<li>2 tsp olive oil</li>
<li>1 tsp salt</li>
</ul>
<p><strong> </strong></p>
<p><strong>Preparation:</strong> Cut the jicama and/or carrots to look like fries. Toss with salt, turmeric and lemon juice. Drain excess water before serving.</p>
<h3>Recipe for Raw Tamarind Chutney</h3>
<p><strong>Tools:</strong> Blender</p>
<p><strong>Ingredients</strong>:</p>
<ul>
<li>2 medium tomatoes (diced)</li>
<li>1 medium tomato (whole)</li>
<li>10 tamarind pods (seeded)</li>
<li>1 Tbl onion (diced)</li>
<li>1 tsp lemon juice</li>
<li>1 small hot pepper</li>
<li>½ tsp salt</li>
</ul>
<p><strong>Preparation</strong>:  Blend the whole tomato, tamarind and small hot pepper, adding water or coconut water as needed, until you achieve a thick liquid consistency. Mix in diced tomatoes and onions.  Makes about 2 cups</p>

</p><p>If you&#8217;ve ever read the label on a traditional mustard jar, you&#8217;ve probably wondered what some of those ingredients with long names are.   While mustard naturally keeps well, most makers add preservatives and other chemicals to give it a longer shelf life.</p>
<p>The good news is that you can make a very tasty raw food mustard and know that all the ingredients are high quality and safe.     Here&#8217;s my favorite recipe for mustard.  It takes just a few minutes to make and you can keep it in your refrigerator for up to a month.</p>
<h3>Raw Vegan Mustard Recipe</h3>
<p><strong> </strong></p>
<p><strong>Tools: </strong>Blender</p>

<p><strong> </strong></p>
<ul>
<li>1 C yellow mustard seeds (soaked and rinsed)</li>
<li>½ C apple cider vinegar</li>
<li>¾ C dates (well packed)</li>
<li>2 Tbl honey</li>
<li>¼ &#8211; ½ C water</li>
<li>2 tsp salt</li>
</ul>
<p><strong>Preparation:</strong></p>
<p>Combine all ingredients in a blender and blend until creamy, adding water as needed. The mustard may taste quite bitter at first; the bitterness will subside the longer it sits. It is best to make this mustard two or three days before you are planning on using it to let the flavors settle. Store in a jar in the refrigerator for up to two months.</p>
<p>Makes about 3 cups</p>

<p>So, you&#8217;re looking into a raw food diet and wanting to make it easy on yourself.  First thing I want to say is  &#8220;congratulations.&#8221;  Going raw, even just part way, can transform your life in more ways than you can imagine.   I&#8217;ve been doing it now for 10 years and I feel like a different person altogether.  Over the years I&#8217;ve  helped a lot of people transition to raw food lifestyles and I&#8217;ve learned quite a bit about what works and  what doesn&#8217;t.  I&#8217;ve put this little guide together to make raw food easier.  I hope it helps you.</p>
<p><strong>TIP ONE: When you first start out with raw foods you&#8217;re going to see some amazing looking dishes like raw  pizza and raw chocolate</strong>.</p>
<p>If you&#8217;ve got a restaurant where you can eat them, great!  If not, please do not  stress about learning to make them right away.  Raw food chefing is a skill that takes a while to master.  I  had a lot of success with doing things like eating 4 or 5 avocados with some seaweed when I first started into raw.  The main point is, don&#8217;t try to get to fancy to early or you might just get frustrated.</p>
<p><strong>TIP TWO:  Learn about superfoods and get them into your diet as soon as you can.</strong></p>
<p>Here&#8217;s the thing.  Not all foods are created equal.  Some are incredibly high and dense in nutrients, proteins, minerals, fatty acids and so on.   You&#8217;ll have a much better chance of succeeding on raw food if you start eating them early on.  That&#8217;s  because these foods will give you much of the nutrition you need while you’re making the transition.  Some examples of superfoods include goji berries, flax seed oil, coconut oil, bee pollen and spirulina.  A great way to get them into you is to blend them in a smoothie.  My morning superfood smoothie usually takes me through the day until 3 or 4pm.</p>
<p><strong>TIP THREE: The sooner you can complete a thorough herbal cleanse the better. </strong></p>
<p>For years, you&#8217;ve probably been eating some kinds of food that don&#8217;t digest well.  When you change to raw, some detox will happen automatically.  But you can really improve your results, if you complete an herbal cleanse quickly in your raw path.  I waited two years to do it, but I really wish I hadn&#8217;t.  I can&#8217;t really describe to you how great I felt after my first cleanse.   The one I use is called the &#8220;ultimate cleanse&#8221; by Brett Elliot</p>
<p>Following these tips will save you some time and get you to the &#8220;juice&#8221; of the raw lifestyle faster than most people.  Soon enough you&#8217;ll have some friend or family member coming up to you and asking why you&#8217;re looking so much younger and healthier.</p>

</p><p>One of the benefits of eating raw food flax seed crackers, besides the fact that they taste great, is that they are high in fiber. Flax seeds contain 28 grams of dietary fiber per 100 gram serving. Dietary fiber is important for strong and regular bowel motion.</p>
<p><strong>Here’s my favorite recipe for raw food flax crackers &#8211; Italian style:<br />
</strong><br />
Tools you need: Food Processor with “S” blade, Grinder, Dehydrator</p>
<p><strong>Ingredients</strong>:<img class="alignright size-thumbnail wp-image-244" title="flax seed crackers" src="http://healingvibes.com/wp-content/uploads/2009/12/confetti-crackers-132x200.jpg" alt="flax seed crackers" width="132" height="200" /></p>
<p>2 cups Flax Seeds<br />
1 cup Ground Flax Seeds<br />
1/4 cup Nama Shoyu, Tamari or Bragg’s<br />
3-4 T finely chopped Italian herbs to taste</p>
<p><strong>Preparation:</strong></p>
<p>In a large bowl soak whole flax seeds in 4 cups distilled water and nama shoyu or tamari for 4-6 hours.<br />
After soaking mix in ground flax seeds, herbs and extra water if necessary. The consistency should be like a thick almond butter.</p>
<p>Spread the mixture evenly on dehydrator trays about 2-3 mm thick. Dehydrate at 40-45 C (110-118 F) for 6-8 hours then flip over to dry the other side for another 2-4 hours until desired crispiness is achieved.</p>

<p>I personally was never a big fan of chocolate, at least until I started experiencing pure raw cacao.   I think the reason is that “normal” chocolate has literally been cooked to death.  To make a typical chocolate bar, cacao beans are crushed, fermented and then roasted at 150 C (300 F) for 1 &#8211; 2 hours.  After that, they are tempered with boiling water for 20-30 minutes.</p>
<p>When you add processed sugar, milk products, preservatives, artificial colors, chemical flavors and more to this lifeless chocolate substance it&#8217;s no wonder that some people develop allergies to chocolate.   Interestingly, I’ve seen that most people with chocolate allergies do not have a similar reaction with raw cacao.</p>
<p>Since I experienced raw cacao for myself a few years back, I find myself enjoying it often.   I regularly add a few whole beans to my smoothies.  I use cacao in salad dressings and sauces.  And sometimes I just snack a few beans with a bit of agave or honey.</p>
<p>But, thanks to my wife Gabrielle, I get most of my raw cacao in the form of great tasting raw chocolate bars.</p>
<p><strong> </strong></p>
<p><strong>Here is her basic recipe for Truly Raw Chocolate</strong></p>

<p><em> Ingredients for simple truly raw chocolate:</em></p>
<ul>
<li>1/2 C whole peeled cacao beans, ground</li>
<li>1/4 C raw honey or raw agave syrup</li>
<li>1/8 C melted cacao butter (use coconut oil if not available)</li>
<li>1/8 C coconut oil</li>
</ul>
<p><em> Optional ingredients:</em></p>
<ul>
<li>1 T almonds, finely chopped</li>
<li>1/4 cup raisins</li>
<li>Celtic sea salt to taste</li>
<li>1 drop orange, lemon, clove, lavender or other essential oil</li>
<li>Cinnamon to taste</li>
</ul>
<p><em> Preparation:</em></p>
<p>Grind cacao until it is very fine.  The cacao will have a consistency like raw almond butter and will stick to the sides of the grinder.  Mix ground cacao with coconut oil or cacao butter in grinder.  Remove mixture and add honey and other ingredients.  Stir well with a fork.   The mixture should be able to be poured.  If not, add more coconut oil.  Pour into ice cube trays or other forms and freeze for 45 minutes.  Serve immediately after removing from the freezer.</p>

<li>The word &#8216;Chocolate&#8217; comes from the Aztec word, &#8216;cacahuatl&#8217; or ‘xocolatl’. This means &#8216;bitter water&#8217;</li>
<li>Raw Cacao was regarded as an aphrodisiac by Aztecs</li>
<li>Cacao beans were so valuable in ancient Mexico that the Maya and subsequent Aztec and Toltec civilizations used them as a means of currency to pay for commodities and taxes</li>
<li>Cacao contains antioxidants which may help prevent cancer and heart disease.</li>
<li>Cacao brings instant comfort and acts as a mild anti-depressant by increasing our serotonin and endorphin levels</li>
<li>In 1624 Johan Franciscus Rauch an Austrian professor, tried to ban chocolate from monasteries and urged monks not to drink chocolate as he said it ‘inflamed passions’</li>
<li>Cacao contains theobromine, which is a mild relative of caffeine and magnesium. This chemical is found in some tranquilisers. Because coffee also contains caffeine, it both picks you up and calms you down</li>
<li>Every Russian and American space voyage has included chocolate bars.</li>
<li>The French Leader Napoleon insisted that chocolate as well as wine be available during military campaigns.</li>
<li>During the Second World War, the U.S. Government commissioned Milton Hershey to create a candy bar to be included in soldier’s rations.  The candy bar chosen was the famous Hershey Milk Chocolate Bar.</li>
